Authentic cold smoked cheese is a process that many try, but very few master.  Cold smoking is a time consuming process of both temperature control and having just the right amount of smoke.  The cheese retains its original color, form, and flavor, while adding the true taste of apple wood, unlike hot or liquid smoke.  Please check out the different varieties and feel free to contact us with any questions or comments.
